Almond Banana Bread

This "bread" recipe is fantastic for those of you trying to cut out refined white flour.  Sweetened mainly by ripe bananas there is no refined sugar either.  Almond flour is simply raw almonds that have been groud up fine.  You can either buy it in the grocery store or grind your own. 

Almond Banana Bread

3 cups almond flour
2 ripe bananas, mashed
2 eggs, beaten
¾ tsp baking soda
¼ tsp sea salt
2 Tbsp honey (optional)
3 Tbsp butter, melted
1 Tbsp vanilla
1 cup mixed nuts and seeds (walnuts, pecans, hemp, chia, pumpkin, sesame)

Use whatever combination of nuts and seeds you want or a single variety.

Method
Preheat oven to 325 degrees
Combine bananas, eggs,vanilla, honey (if adding) and butter in a mixing bowl. Stir in flour, baking soda and sea salt. Fold in nuts.
Butter a loaf pan or 9 x 9 square pan. Pour in mixture and place in oven for 45 minutes.
Alternately you may make muffins (decrease baking time to 25 minutes)
