Prosciutto & Arugula Roll Ups!
This is what I like to call a non-recipe. Simple ingredients and no cooking required - assembly only! Fancy and delicious enough to serve for company, but easy enough to do any night of the week.
Rich and salty Prosciutto
Fresh and spicy Arugula
Tangy Goats cheese
Accented by some sweet basil and olive oil.
Lay thin slices of prosciutto on work surface.
Place some baby arugula and 1 basil leaf at one end.
Top with about 1 Tbsp of plain or herbed goat cheese.
Roll it up, drizzle with Olive oil and serve!
Leave whole or cut in half.
Serve with a glass of wine! Enjoy!
