Coco-Nutty Squares

This is a grab and go - get me the hell out of the house, nutrition packed square.  I make them for myself and inevitably my kids grab them and go!!!  The great thing about this recipe is that you can change it up with whatever nuts and seeds you have on hand.  Packed with essential fats, protien, complex carbs and fiber the only thing that adds sweetness to these squares is pitted dates. 

The dates, coconut oil and almond butter is the base
to which any other nuts and seeds can be added.
3/4 cup pecans
3/4 cups pitted dates
1/2 cup shredded unsweetened coconut
3 Tbsp black sesame seeds
3 Tbsp chia seeds
1/4 cup coconut oil
1 cup almond butter
1 1/2 tsp cinnamon
1 tsp vanilla
1 tsp nutmeg
1/2 tsp sea salt

In a food processor add pecans and pulse until nuts are finely ground.
Add dates and pulse until pecans and dates are well combined.
Add sesame seeds, chia seeds and pulse until combined.
Add the remaining ingredients and process for 60 seconds.
Pour into a 9x9 glass dish and place in the freezer for at least 45 minutes.  Cut into squares and store in freezer.  Eat right out of the freezer!
