Father's Day Gifts from the Kitchen!

Father's day is just around the corner and I have some great ideas to give dad a unique and delicious - Gift from the Kitchen.  The fact that fathers day falls in June makes most of us think BBQ -and I couldn't agree more!  A little spin on that theme is to think Garden!  With most of us trying to eat local - why not buy dad some great vegetable and herbs for the garden!  Not only is it the gift that keeps on giving, but its a great way for the kids and dad to spend some quality time together.  Below are two great recipes that use the "fruits" or vegetables of that well spent time together.

Chimichurri Sauce
This condiment is a flavour packed party in your mouth.  Bold flavours and completely healthy!  While it is traditionally used with grilled meat, it works equally well on poultry, fish, grilled vegetables or mixed into pasta or potato salads! 

2 cup parsley
2 cup cilantro
2 cloves garlic
1 Tbsp oregano
2 tsp red chili flakes
3 Tbsp red wine vinegar
1/3 cup olive oil
1 tsp sea salt
1 tsp black pepper

Place all ingredients in a food processor and blend until well blended.  Store in an air tight container.
This will last for at least 1 month in the refrigerator.


Pico de Gallo

A simple fresh salsa, this is a great alternative to jarred, cooked heavy salsas. Serve with Tortilla chips, on tacos or with grilled meat!

2 tomatoes, diced
1/2 cup diced green pepper
1/2 cup diced onion
1 jalapeno, minced
1-2 cloves garlic, minced
2 Tbsp olive oil
Juice of 1 lime
salt and pepper to taste

Combine all ingredients in a bowl, let sit 10 minutes and serve!
