Use Your Noodle!

Let's face it,  kids and teens love instant noodles and parents love that they are convenient, cheap, portable and can be stored f o r e v e r!  While instant noodles and soup may seem innocent, they are in a nutshell - junk food!  The majority of these noodle packages contain unwanted additives,  preservative - including MSG, trans fats, artificial flavours and colours,  not to mention that the noodles are often deep fried before they are dried!  Realistically,  none of these truths deter  kids and university students alike, from eating these instant noodle packages. So, let's build a better "instant" noodle package  - one that can be made in the same amount of time for close to the same price  but with way more flavour and potential for nutrition!

  Once you buy a few things for your pantry the noodle making fun can begin!

The Players
The Noodle 
The best noodles to use are rice noodles. They cook in boiling water or broth in 5 minutes or less . I prefer the Presidents choice variety as they already come divided into 5 individual servings .

The Liquid

There are many combinations you can use here.  Ideally homemade stock would rock this - but organic chicken or vegetable stock works well too.  If you have neither simply use water.

Basic Flavouring
The balance of sweet, salty, sour and heat helps elevate the flavour of the noodles.
Tamari or Soy Sauce - salty
Sambal Olek or hot sauce of your choice - heat
Lime - a kick of acidity to lift the flavour of noodles
(lemon or rice vinegar works equally well)

Other  Quick Cook Additions
All of these can be added in during the last 30 seconds that the noodles are cooking.
Grated carrot
Thinly sliced mushroom
Leftover chicken, beef, pork, shrimp
Thinly slices green onion
Bean sprouts
Snow peas
Baby spinach
Frozen peas
Fresh Herbs - cilantro, parsley, basil, chives

The above noodle bowl is my 13 year old son's favourite!
1 Portion PC Thai Rice Noodles
1 1/2 cups broth
1-2tsp tamari
1-2 tsp lime juice
2 tsp sambal olek
  1. Place medium pot on stove over medium heat.
  2. Add broth, tamari, sambal olek and bring to boil.
  3. Add rice noodles and cook in boiling liquid for 4-5 minutes.
  4. Turn off the heat and add lime juice and cilantro


  1. I didn't know instant noodles were so bad! well you've taught me. We often do egg noodles in chicken broth but I'll try the rice noodles next time.

    1. Sambal Olek can be found in the international aisle at most grocery stores. It is ground fresh chili paste. If you can't find it you can always use your favourite hot sauce.
