Global Coleslaw - The perfect summer side!

Crispy crunchy and totally refreshing, coleslaw has to be the perfect summer side.  While I don't mind taking the time to chop fresh cabbage, carrots and the like, most people find this preparation tedious and a game breaker. Luckily,  your local produce aisle sells colourful bags of pre- shredded vegetables including cabbage, carrots and broccoli!  Preparing a healthy and delicious no-cook side, in under 10 minutes, has never been so easy.  If you default to a typcial mayo dressing, mix things up this summer with these fresh combinations!


The Slaw (4-6 cups)
If you don't mind the prep work use red/green cabbage or savoy, and carrots as your base. I also like to throw in Kale, turnip greens or spinach thinly sliced - make it as simple as you wish.
Take your pick from any bag of preshredded coleslaw mix - cabbage, broccoli, carrot or any combination of the three.

The  Basic Dressing

1/3 cup Plain Yogurt
2 Tbsp Sour Cream
1 Tbsp Honey Mustard (or dijon)
2 Tbsp Rice Vinegar
1 Tbsp honey (sugar )
1/2 tsp salt & pepper

Oil & Vinegar
1/4 cup Rice Vinegar Vinegar
3 Tbsp Grapeseed Oil (or other mild oil)
2 Tbsp honey (sugar)
1/2 tsp salt and pepper

The Flavour Agents
Think of your favourite tossed salad and add any of those ingredients to your slaw...
  • Toasted nuts or seeds
  • Dried cranberries, blueberries, raisins or apricots.
  • Sliced apple, jicama, cucumber, peppers, onions
  • Fresh & dried herbs
  • Bacon bits, diced chicken
  • Olives, capers

Here's 3 Coleslaw's with Global Flare

Thai Slaw
4-6 cups of slaw
Oil & Vingegar Dressing
Add 1 Tbsp fish sauce, 1 Tbsp sambel olek (hot sauce), Zest and juice of 1/2 lime, 2 tsp sesame oil, 1/4 cup chopped cilantro, garnish with toasted cashews or peanuts
Make it a meal: Top with sliced flank or Tri-tip steak

Greek Slaw
4 cups of slaw
1/2  cucumber cut into matchsticks, 1 tomato diced, 1/2 red onion sliced into half moons
Creamy Dressing - replace the plain yogurt with tzatziki!
Add 1 tsp dried oregano, 1 Tbsp freshly chopped mint
Garnish with black olives
Make it a meal: Serve with grilled pita and Lamb chops.

Island Slaw
4 Cups of slaw (I like to use mostly pre-shredded carrot slaw for this one)
Creamy Dressing - add 1/2 tsp allspice, 1/2 tsp ground ginger, 1/2 tsp ground cumin
Add 3 Tbsp of finely chopped candied ginger.
Garnish with toasted pecans!
Make it a meal: Chop up a pre-cooked chicken (jerk flavoured if possible) and stir it in.
