|Oatmeal Banana with Blueberries|
This is a fantastic recipe to have on hand. It allows you to alter the recipe based on what Add-ins you have in your pantry or refrigerator. You can make these muffins either sweet or savoury. Stick this recipe in the inside of your pantry door and have fun using your imagination for endless variation.
2 1/2 cups flour/grains
1 cup milk
Up to 1/2 cup sweetener
Up to ¼ cup fat
2 teaspoons baking powder
1/2 teaspoon salt
Up to 1 1/2 cups additions
Makes 12 large Muffins
Flour: Use 2 1/2 whole wheat flour. Or substitute 1 cup oatmeal, cornmeal, rye flour, quinoa flour for 1 cup of the whole wheat flour.
Milk: Use 1 cup milk or milk substitute (almond, soy rice) or substitute fruit juice for part or all of the milk. You may also use buttermilk but see baking powder change.
Fat: Use 1/4 cup vegetable oil or 4 tablespoons melted butter. If using a wet add-ins the fat can be reduced or omitted.
Egg: 1 egg
Sweetener: 1/2 cup honey, maple syrup or molasses. If you are making a savoury muffin only use 2 Tbsp.
Baking Powder: Use 2 teaspoons. If using buttermilk, decrease to 1 teaspoon and add 1/2 teaspoon baking soda.
Salt: 1/2 teaspoon.
Add-in ingredients may be used in any combination, roughly 1 1/2 cups total. If you use more than 1 cup of wet additions, reduce the milk to 1/2 cup.
Dry Additions: Nuts, sunflower seeds, raisins, coconut, chia seeds, flax seeds, dried fruits, chocolate chips, chopped ham, pepperoni, crumbled bacon, shredded cheese, olives, sundried tomatoes.
Moist Additions: Blueberries, chopped apple, pineapple, berries, freshly shredded zucchini, shredded carrot, frozen fruit and vegetables, diced onions, tomatoes, peppers.
Wet Additions: Pumpkin puree, applesauce, mashed cooked sweet potato, mashed banana, tomato paste/sauce, yogurt, sour cream
Free Add-Ins – You don’t have to add this to the allotment of 1 ½ cup add-ins
Spices/Herbs: 2-3 tsp dried herbs or spices in any combination cinnamon, nutmeg, clove, cayenne, chili powder, thyme, Italian seasoning, basil, oregano, grated citrus zest (lemon, orange, lime). 1-2 Tbsp chopped fresh herbs like parsley, chives, basil, cilantro, tarragon. Use your imagination.
Filled Muffins: Fill cups half full with batter. Add 1 teaspoon jam/preserves, cream cheese, nut butter and top with 2 more tablespoons batter.
Combine dry ingredients in one bowl, and then mix in wet ingredients in a second bowl. Stir in add-ins to the dry bowl. Pour wet ingredients into dry bowl and stir until just combined; the batter should be lumpy. Line muffin tins with paper liners and fill ¾ full, bake in a preheated oven at 400 degrees for 20 minutes (give or take 5 minutes).
